Green Festival Speakers
A food educator and passionate locavore, Itbi has taught in FRESHFARM Markets' FoodPrints program at Watkins Elementary School since 2010 and helped develop a series of standards-aligned, open source, kitchen- and garden-based public school lessons for 1st and 3rd graders. She has been a guest cooking instructor at the Lederer Youth Garden and led bilingual lessons on canning for the Padres Latinos/Linkages to Learning program. She does seasonal cooking demos at 14th & U, Bloomingdale and Columbia Heights farmers markets. She was Mobile Market Manager for the Arcadia Center for Sustainable Food & Agriculture in 2011. She writes for various publications including Acres USA. She serves on the board of Slow Food DC.
