At 41, Hartley has spent less than half of his lifecaring muchabout food. There were a lot or pursuits between here and there. Hartley grew up in the Pacific Northwestbackpacking and traveling around, at college for a physics degree, working fishing boats in Alaska and construction in Seattle.Where'd the kitchen part come in? Professional cooking was made for folks with lots of energy and short attention spans.
Hartley helps run Tom Douglass' widely acclaimed group of restaurants in Seattle, as chef of the Palace Kitchen and now as head of operations. Turns out all time spent roasting marshmallows around the campfire paid off.
